Chicken & Cranberry Wellington with Brie and Walnut Crust

A festive reinterpretation of the traditional Wellington, this dish features succulent chicken breasts enveloped in flaky puff pastry, filled with cranberry sauce and rich Brie, and crowned with a delightful walnut crust, making it an exquisite centerpiece for your Christmas celebration.


Ingredients:

For the Filling:

4 boneless, skinless chicken breasts

1/2 cup cranberry sauce

6 ounces Brie cheese, sliced

1/4 cup walnuts, finely chopped

1 tablespoon fresh thyme leaves

1/2 teaspoon salt

1/4 teaspoon black pepper


For the Puff Pastry:

2 sheets puff pastry, thawed

1 large egg, beaten


For the Walnut Crust:

1/4 cup walnuts, finely chopped

1 tablespoon breadcrumbs

1 teaspoon melted butter


Instructions:

Prepare the Filling

Preheat the oven to 375°F (190°C).

Season the chicken breasts with salt and pepper.

In a skillet over medium heat, add a drizzle of olive oil. Sear the chicken breasts for 2 minutes on each side until golden brown, ensuring they are not fully cooked. Set aside to cool.


Assemble the Wellington

On a floured surface, roll out each puff pastry sheet slightly. Cut each sheet in half to form four rectangles.

Spread 2 tablespoons of cranberry sauce in the center of each pastry rectangle.

Position a seared chicken breast atop the sauce, followed by slices of Brie and a sprinkle of chopped walnuts and thyme.


Wrap the Pastry

Fold the edges of the puff pastry over the chicken, sealing them securely. Place the sealed side down on a baking sheet lined with parchment paper.


Add the Walnut Crust

In a small bowl, combine the chopped walnuts, breadcrumbs, and melted butter. Brush the tops of the pastry with the beaten egg, then gently press the walnut mixture onto the top to create a crunchy crust.


Bake

Transfer to the preheated oven and bake for 25-30 minutes, or until the pastry is golden and puffed, and the chicken is thoroughly cooked.


Serve

Allow the Wellington to cool slightly before slicing. Garnish with fresh thyme and serve with additional cranberry sauce on the side.
