Crispy Greek Chicken Tenders

Ingredients:
• 1 lb chicken tenders
• 2 tbsp olive oil
• Juice of 1 lemon (about 2 tbsp)
• 2 cloves garlic, minced
• 1 tsp dried oregano
• 1 tsp dried thyme
• 1 tsp paprika
• ½ tsp salt
• ¼ tsp black pepper
• 2 tbsp fresh parsley, chopped (for garnish)
Instructions:
1. Prepare the Marinade:
In a large mixing bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, thyme, paprika, salt, and pepper until well combined.
2. Marinate the Chicken:
Add the chicken tenders to the bowl and coat them evenly in the marinade. Cover and refrigerate for at least 30 minutes (up to 2 hours for deeper flavor).
3. Preheat & Prep for Cooking:
Heat a grill or skillet over medium-high heat. If using a skillet, add a small drizzle of olive oil to prevent sticking.
4. Cook the Chicken Tenders:
Remove chicken from the marinade and let excess drip off. Cook for 5–7 minutes per side, or until golden brown and the internal temperature reaches 165°F (75°C).
5. Finish & Serve:
Let the chicken rest for a few minutes after cooking to lock in juices. Garnish with fresh chopped parsley and serve warm. Optional: Serve with tzatziki sauce for dipping!
