Crème Brûlée Cheesecake Bars

Preparation Time: 45 minutes (plus chilling time)
Ingredients:
1 ½ cups graham cracker crumbs
½ cup melted butter
24 oz cream cheese, softened
1 cup granulated sugar
3 large eggs
1 teaspoon vanilla extract
1 cup heavy cream
¼ cup brown sugar (for topping)
Instructions:
Preheat your oven to 325°F (165°C). Line a 9x13-inch baking pan with parchment paper.
Mix the graham cracker crumbs with melted butter and press into the bottom of the pan to form the crust.
In a large bowl, beat the cream cheese and sugar until smooth. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and heavy cream.
Pour the cream cheese mixture over the crust and bake for 40-45 minutes, or until the center is set. Cool completely before refrigerating for at least 4 hours.
Before serving, sprinkle the brown sugar evenly over the top of the cheesecake bars. Use a kitchen torch to caramelize the sugar until golden and crispy.
Cut into bars and serve.
