Roasted Red Pepper, Spinach, and Mozzarella Stuffed Chicken.

Ingredients:
4 boneless, skinless chicken breasts, pounded to 1/2-inch thickness
1 red bell pepper, roasted and diced
1 cup fresh spinach, chopped
1/2 cup grated mozzarella cheese
1/4 cup grated Parmesan cheese
1/4 cup breadcrumbs
1 egg, beaten
1/4 teaspoon salt
1/4 teaspoon black pepper
Instructions:
Make the Filling: In a medium bowl, combine the roasted red pepper, chopped spinach, mozzarella cheese, Parmesan cheese, breadcrumbs, egg, salt, and black pepper. Mix until well combined.
Stuff the Chicken: Using a sharp knife, create a slit in the side of each chicken breast to form a pocket. Spoon the filling into each chicken breast, pressing it in gently. Secure the opening with toothpicks to hold the filling in place while cooking.
Roast the Chicken: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and arrange the stuffed chicken breasts on it. Roast in the preheated oven for 25-30 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
Serve: Remove the toothpicks before serving. Serve the stuffed chicken with your favorite sides, like roasted vegetables, mashed potatoes, or a fresh side salad.
For a spicy kick, add a pinch of red pepper flakes to the filling mixture.
You can substitute roasted red pepper with sun-dried tomatoes for a different flavor profile.
Serve with a dollop of sour cream or a drizzle of balsamic glaze for extra flavor.
