A flavorful blend of cheeses, herbs, and Mediterranean-inspired ingredients, this antipasto cheese log is perfect for entertaining! Serve it with crackers, breadsticks, and fresh veggies for an elegant and easy appetizer.
Ingredients:
8 oz cream cheese, softened
1 cup shredded mozzarella cheese
1/4 cup chopped sun-dried tomatoes
1/4 cup chopped black or green olives
1/4 cup roasted red peppers, finely chopped
1 teaspoon Italian seasoning
1/4 teaspoon garlic powder
1/4 teaspoon crushed red pepper flakes
1/4 cup chopped parsley or basil
Crackers, breadsticks, and fresh vegetables (for serving)
Directions:
Prepare the Cheese Mixture:
In a medium bowl, mix together the cream cheese, mozzarella, sun-dried tomatoes, olives, roasted red peppers, Italian seasoning, garlic powder, crushed red pepper flakes, and parsley or basil. Stir until well combined.
Shape the Log:
Lay a piece of plastic wrap on a flat surface.
Transfer the cheese mixture onto the plastic wrap and shape it into a log.
Wrap tightly and refrigerate for at least 2 hours, or until firm.
Roll and Coat:
Spread additional chopped sun-dried tomatoes, olives, and roasted red peppers on a flat plate.
Unwrap the chilled cheese log and gently roll it in the mixture to coat evenly, pressing lightly to ensure the toppings stick.
Serve:
Place the cheese log on a serving platter.
Surround with crackers, breadsticks, and fresh vegetables for dipping.
