Authentic Szechuan Sauce

Ingredients:
- 1/4 cup soy sauce
- 2 tbsp rice vinegar
- 1 tbsp hoisin sauce
- 1 tbsp sesame oil
- 1 tbsp chili paste or Szechuan peppercorn paste
- 2 tbsp brown sugar
- 2 cloves garlic, minced
- 1 tsp fresh ginger, minced
- 1 tbsp cornstarch mixed with 2 tbsp water (for thickening)
- 1/2 tsp Szechuan peppercorns, lightly crushed (optional, for authentic flavor)
- 1 tbsp green onions, chopped (optional, for garnish)
Directions:
1. In a small saucepan, combine soy sauce, rice vinegar, hoisin sauce, sesame oil, chili paste (or Szechuan peppercorn paste), brown sugar, garlic, and ginger.
2. Bring the mixture to a simmer over medium heat, stirring occasionally, for about 3-5 minutes, until the sauce slightly thickens and the flavors meld together.
3. In a small bowl, mix the cornstarch with water to create a slurry. Slowly pour the slurry into the sauce while stirring constantly to thicken it further.
4. If using, stir in the lightly crushed Szechuan peppercorns and simmer for another 1-2 minutes to infuse the sauce with the peppercorn flavor.
5. Remove from heat and allow to cool slightly before serving. Optionally, garnish with chopped green onions.
Storage Information:
Store the sauce in an airtight container in the refrigerator for up to 1 week.
