Black Pepper Chicken with Mushrooms

Ingredients:
- 1 lb (450g) chicken breast, thinly sliced
- 1 tbsp black pepper, freshly ground
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- 1 tbsp cornstarch
- 2 tbsp vegetable oil
- 8 oz (225g) mushrooms, sliced
- 1 small onion, sliced
- 2 cloves garlic, minced
- 1/4 cup (60ml) chicken broth or water
Instructions:
1. In a bowl, toss the chicken with cornstarch, soy sauce, oyster sauce, sesame oil, and black pepper. Let it marinate for 15-20 minutes.
2. Heat the vegetable oil in a large skillet or wok over medium-high heat.
3. Add the marinated chicken slices and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.
4. In the same pan, add the onions and garlic, sautéing for 2 minutes until fragrant.
5. Add the sliced mushrooms and cook for another 4-5 minutes until they are tender.
6. Return the cooked chicken to the pan. Pour in the chicken broth and stir well to coat everything in the sauce.
7. Simmer for 2-3 minutes until the sauce is slightly thickened. Serve hot with rice.
