Candied Lemon Magic with Whipped Feta & Chili Pistachio Crunch

Ingredients

For the Candied Lemon Slices


2 large lemons, thinly sliced (seeds removed)

1 cup (200g) granulated sugar

1 cup (240ml) water


For the Whipped Feta


200g feta cheese

½ cup (120g) Greek yogurt or labneh

1 tbsp olive oil

Zest of ½ lemon

1 tsp honey (optional, for balance)

For the Swicy Crumble

⅓ cup shelled pistachios, toasted and finely chopped

½ tsp red chili flakes

Flaky sea salt, to taste


Garnish

Extra lemon zest


Fresh thyme or mint leaves (optional)


Instructions

The lemon slices shimmer like golden glass, the feta is creamy as a cloud, and that pistachio crumble? It’s the spicy crunch you’ll crave all week.


Make the candied lemons: In a saucepan, combine sugar and water. Stir and bring to a gentle simmer.


Add lemon slices in a single layer and simmer on low heat for 30–40 minutes, flipping halfway, until translucent and tender.


Transfer slices gently to a cooling rack or parchment to set. Let them dry slightly, but keep them glossy and flexible.


Prepare the whipped feta: In a food processor, blend feta, Greek yogurt, olive oil, lemon zest, and honey until ultra smooth and fluffy.


Mix the swicy crumble: Combine toasted pistachios, chili flakes, and flaky salt in a small bowl.


To assemble, dollop or swoosh whipped feta on a small plate or platter.


Arrange 2–3 candied lemon slices over the feta.


Sprinkle generously with pistachio-chili crumble for a crunchy kick.


Add extra zest or fresh herbs for color and brightness.


Serve chilled or room temp as a starter, mezze, or small plate.
