Chicken Wontons in Spicy Chili Sauce

Ingredients:
For the Wontons:
1/2 lb (225g) ground chicken
2 tablespoons soy sauce
1 tablespoon sesame oil
2 green onions, finely chopped
2 cloves garlic, minced
1 teaspoon grated ginger
1/2 teaspoon salt
1/4 teaspoon white pepper
1 teaspoon cornstarch
25–30 wonton wrappers
For the Spicy Chili Sauce:
1/4 cup soy sauce
2 tablespoons black vinegar (or rice vinegar)
2 tablespoons chili oil (with flakes)
1 teaspoon sugar
1 clove garlic, minced
Optional: 1 tablespoon hot water to loosen the sauce
Directions:
In a bowl, combine ground chicken, soy sauce, sesame oil, green onions, garlic, ginger, salt, pepper, and cornstarch. Mix until well combined.
Place 1 teaspoon of filling into the center of each wonton wrapper. Moisten edges with water, fold and seal into a triangle or desired shape.
Bring a pot of water to a boil. Add wontons in batches, boiling 3–4 minutes or until they float. Remove with a slotted spoon.
In a separate bowl, mix all ingredients for the spicy chili sauce. Taste and adjust heat/sweetness if needed.
Toss cooked wontons in the spicy sauce or serve with sauce drizzled over. Garnish with more green onions or sesame seeds if desired.
