A stunning holiday dessert featuring layers of light and airy pavlova, whipped pistachio cream, and vibrant berries, beautifully stacked like a Christmas tree.
Ingredients:
For the Meringue:
6 egg whites (room temperature)
1 1/2 cups granulated sugar
1 teaspoon cornstarch
1 teaspoon white vinegar
1/2 teaspoon vanilla extract
Green food coloring (optional, for a festive touch)
For the Filling:
1 cup heavy whipping cream
2 tablespoons powdered sugar
1/2 cup pistachio cream (store-bought or homemade)
For Garnish:
1 cup fresh red berries (raspberries, pomegranate seeds, or cranberries)
Powdered sugar, for dusting
Edible gold accents (optional)
Instructions:
Prepare the Meringue
Preheat the oven to 250°F (120°C) and line baking sheets with parchment paper.
In a clean mixing bowl, beat the egg whites until soft peaks form. Gradually add the sugar, one tablespoon at a time, and beat until stiff, glossy peaks form.
Gently fold in the cornstarch, vinegar, vanilla extract, and a drop of green food coloring, if desired.
Shape and Bake
Pipe or spoon the meringue into various-sized circles (from large to small) to create stackable layers for your tree. Aim for about 6-8 layers.
Bake for 1 1/2 hours. Turn off the oven and leave the meringues inside to cool completely.
Make the Filling
Whip the heavy cream with powdered sugar until soft peaks form. Gently fold in the pistachio cream for a smooth, nutty filling.
Assemble the Tower
Start with the largest meringue circle as the base. Spread a layer of pistachio cream and whipped cream on top. Add a few red berries for a festive touch.
Continue stacking the meringues, adding cream and berries between each layer, ending with the smallest meringue at the top.
Decorate and Serve
Dust the entire pavlova tower with powdered sugar to mimic snow. Garnish with extra berries and edible gold accents for a dazzling effect.
Place the pavlova tower on a festive platter and serve immediately.
