Crispy Burrata Arugula Pita Pizzas

Ingredients:
4 whole wheat pita breads
1 tbsp olive oil
1 cup marinara or pizza sauce
2 balls burrata cheese, torn into chunks
1½ cups shredded mozzarella cheese
1½ cups fresh arugula
1 tbsp balsamic glaze (for drizzling)
Salt & black pepper, to taste
Crushed red pepper flakes (optional)
Directions:
Preheat Oven:
Preheat oven to 425°F (220°C). Place pita breads on a parchment-lined baking sheet.
Assemble Pizzas:
Brush each pita lightly with olive oil. Spread a layer of marinara sauce over each. Sprinkle with shredded mozzarella and top with torn burrata.
Bake:
Bake for 8–10 minutes, or until the cheese is bubbly and edges are crispy.
Top & Finish:
Remove from oven and immediately top with fresh arugula. Drizzle with balsamic glaze and sprinkle with salt, pepper, and red pepper flakes if desired.
Serving Suggestions:
Perfect as a quick lunch, appetizer, or light dinner with a side of soup or salad.
