Crispy Chili Beef

This crispy chili beef is loaded with flavor and texture. Tender beef is coated in a crispy batter and then tossed in a spicy chili sauce.
For the beef:
12 oz (340g) sirloin steak, thinly sliced
2 tbsp cornstarch
¼ tsp salt
¼ tsp black pepper
¼ cup vegetable oil
For the sauce:
2 tbsp soy sauce
2 tbsp sweet chili sauce
1 tbsp tomato ketchup
1 tbsp rice vinegar
2 tbsp brown sugar
1 red chili, finely chopped
2 cloves garlic, minced
1-inch piece of ginger, grated
To serve:
3 green onions, sliced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 tsp sesame seeds
Cooked rice or noodles
Prepare the beef: In a bowl, mix the sliced steak with cornstarch, salt, and black pepper until well coated.
Cook the beef: Heat the vegetable oil in a large frying pan or wok over high heat. Add the beef slices and cook for 2-3 minutes on each side until crispy and brown. Remove and drain on paper towels.
Make the sauce: In a small bowl, whisk together soy sauce, sweet chili sauce, tomato ketchup, rice vinegar, and brown sugar until well combined.
Combine: In the same pan, remove excess oil leaving about 1 tablespoon. Add the chopped chili, garlic, and ginger. Stir-fry for about 1 minute until fragrant.
Add sauce: Pour the sauce mixture into the pan and bring to a simmer.
Add beef and vegetables: Return the crispy beef to the pan, add sliced green onions, red bell pepper, and yellow bell pepper. Stir well to coat everything in the sauce. Cook for another 2-3 minutes until heated through.
Serve: Sprinkle with sesame seeds and serve immediately over cooked rice or noodles.
