Croque Madame

Indulge in the delightful layers of a Croque Madame, the ultimate French breakfast sandwich that elevates your morning!
Ingredients:
- 2 slices of brioche or thick bread
- 2 tbsp unsalted butter
- 4 slices of ham
- 1/2 cup shredded Gruyère cheese
- 2 tbsp all-purpose flour
- 1 cup milk
- 1 tsp Dijon mustard
- Salt & pepper to taste
- 2 eggs
- Fresh parsley (for garnish)
Directions:
1. Let's start with the béchamel sauce—melt 1 tbsp of butter in a pan. Whisk in the flour, then slowly add the milk and Dijon mustard until it thickens. Don’t forget to season with a pinch of salt and pepper for flavor!
2. Now, let’s assemble our scrumptious sandwich! Butter one side of each slice of bread, then layer on the ham, a generous handful of Gruyère cheese, and that velvety béchamel sauce.
3. Time to grill! Cook your sandwich in a buttered pan over medium heat until it’s golden brown and the cheese is beautifully melted.
4. While that's cooking, fry up 2 sunny-side-up eggs in a separate pan—this is the cherry on top!
5. Once everything is ready, place the eggs on top of the sandwich, and sprinkle with fresh parsley and a dash of black pepper for that perfect finish.
