Crostini with Balsamic Roasted Cranberries and Creamy Brie

A delightful holiday appetizer featuring crispy crostini topped with melted brie, sweet-tart cranberries, and a touch of rosemary elegance.
Ingredients
For the Crostini:
1 baguette, sliced into ½-inch rounds
2 tablespoons olive oil, for brushing
For the Topping:
1 cup fresh cranberries, bright and tangy
2 tablespoons balsamic vinegar, for a sweet and tangy glaze
1 tablespoon honey, for natural sweetness
¼ teaspoon salt, to balance flavors
8 ounces brie cheese, sliced into rounds
Fresh rosemary sprigs, for garnish
Instructions
1. Prepare the Cranberries:
Preheat your oven to 375°F (190°C).
In a bowl, toss the cranberries with balsamic vinegar, honey, and salt. Spread the mixture evenly on a parchment-lined baking sheet.
Roast the cranberries for 12–15 minutes, or until they burst and become slightly caramelized.
2. Prepare the Crostini:
Brush both sides of the baguette slices with olive oil and arrange them on a baking sheet.
Toast in the oven for 6–8 minutes, flipping halfway through, until golden and crisp.
3. Assemble the Crostini:
Place a slice of brie cheese on each toasted baguette round.
Return the crostini to the oven for 2–3 minutes, or until the brie begins to soften and melt.
4. Garnish and Serve:
Top each crostini with a spoonful of the roasted cranberry mixture.
Garnish with a small sprig of fresh rosemary for a festive touch. Serve immediately while warm.
