Fig, Goat Cheese & Pistachio Wreath

Ingredients:


• 8 ounces goat cheese, softened

• 8 ounces cream cheese, softened

• 1/4 cup dried figs, finely chopped

• 1/4 cup pistachios, shelled and chopped

• 1 tablespoon honey

• 1 teaspoon fresh thyme, finely chopped (optional)

• 1 tablespoon olive oil (for drizzling)

• Fresh figs and pistachios, for garnish (optional)


Directions:


1. Prepare the Cheese Mixture:

In a bowl, combine the softened goat cheese and cream cheese. Use a hand mixer or spatula to mix them until smooth and creamy.


2. Shape the Wreath:

Transfer the cheese mixture to a large, round serving platter. Shape it into a wreath by gently pressing the mixture into a circular shape, or use a round mold to create a neat wreath.


3. Add the Figs and Pistachios:

Sprinkle the chopped dried figs and pistachios over the cheese wreath, gently pressing them into the cheese. Drizzle honey evenly over the top to add a touch of sweetness.


4. Garnish with Fresh Herbs:

If using, sprinkle fresh thyme leaves around the wreath to add a pop of color and flavor. You can also garnish with a few fresh figs and whole pistachios for a more festive look.


5. Chill (Optional):

To let the flavors meld and firm up the wreath, refrigerate it for about 30 minutes before serving (optional).


6. Serve:

Drizzle the wreath with olive oil before serving. Serve with crackers, toasted bread, or sliced vegetables for dipping.
