Gambas al Ajillo

Garlic prawns, or Gambas al Ajillo as they are called in Spain, is a classic tapas dish with a lovely and fine garlic flavour.


A very popular dish, which is actually quite easy to make. My Gambas al ajillo recipe is made the Spanish way, but is also easy to make at home.

This recipe makes 4 servings, but can easily be halved if there are two people who are craving garlic prawns!


INGREDIENTS


800 grams of shrimp, peeled and thawed

7-8 cloves of garlic

2 dl extra virgin olive oil

1 tsp cayenne pepper or dried chili

50 ml white wine, preferably from Spain

1 tbsp chopped parsley

Salt



INSTRUCTIONS


Pour the olive oil into a frying pan and let it heat up while you peel the garlic. If your stove has 9 levels, I recommend 7 or the setting between 7 and 8.


Cut the garlic into fairly thin slices

Put the garlic in the frying pan and let it fry for 1-2 minutes. It should not be burnt.


Pour in the cayenne pepper and stir around. Let it fry together with the garlic for 1 minute.


Put in the shrimp and sprinkle over a pinch of salt. Fry them for about 1 minute on each side.


Then pour in the wine and stir around. Let it simmer for a few minutes on medium heat so that the alcohol evaporates. Feel free to scoop some of the oil and wine from the same frying pan and pour over the shrimp while it simmers.


Remove the frying pan from the stove. Mix in the chopped parsley and stir around. Serve the shrimp immediately at a piping hot temperature.


Feel free to dip some good bread in the oil. It's delicious!
