Gingerbread & Pomegranate Snow Globes

Delicate pavlova shells filled with spiced gingerbread cream and topped with vibrant pomegranate arils, these festive treats are as stunning as they are delicious!


Ingredients

For the Pavlova Shells:

4 large egg whites (room temperature)

1 cup granulated sugar

1 tsp cornstarch

1 tsp white vinegar

1/2 tsp vanilla extract

For the Gingerbread Cream:

1 cup heavy whipping cream

1/4 cup powdered sugar

1/2 tsp ground ginger

1/2 tsp ground cinnamon

1/4 tsp ground nutmeg

1/4 tsp ground cloves

For Topping:

1/2 cup pomegranate arils

Powdered sugar (for dusting)

Mini gingerbread cookies (optional, for decoration)


Instructions

1. Make the Pavlova Shells

Preheat your oven to 250°F (120°C) and line a baking sheet with parchment paper.

In a clean bowl, beat the egg whites with an electric mixer until soft peaks form. Gradually add sugar, one tablespoon at a time, beating until stiff, glossy peaks appear.

Gently fold in the cornstarch, vinegar, and vanilla extract.

Spoon the meringue onto the parchment paper, shaping small circular shells with a well in the center to hold the filling later.

Bake for 1 1/2 hours. Once done, turn off the oven and let the pavlovas cool inside completely for a crisp texture.


2. Prepare the Gingerbread Cream

In a bowl, whip heavy cream and powdered sugar until soft peaks form.

Add ginger, cinnamon, nutmeg, and cloves. Fold gently until fully incorporated. Chill the cream until needed.


3. Assemble the Snow Globes

Spoon or pipe the chilled gingerbread cream into the center of each pavlova shell.

Top with pomegranate arils for a burst of color and flavor.


4. Decorate

Dust the snow globes with powdered sugar to create a snowy effect.

Add a mini gingerbread cookie to each for an extra festive touch (optional).


5. Serve

Arrange the pavlovas on a platter and serve immediately for the freshest texture. If prepared ahead, store in the fridge for up to 2 hours before serving.
