Greek Marinated Olives

Ingredients:

  • 2 cups mixed olives (Kalamata, green, or any favorite variety)

  • 2 tablespoons olive oil

  • 1 tablespoon red wine vinegar (or lemon juice)

  • 2 cloves garlic, thinly sliced

  • 1 teaspoon dried oregano

  • 1 teaspoon red pepper flakes (optional, for heat)

  • Zest of 1 lemon

  • Fresh herbs (such as thyme or rosemary) for garnish

Instructions:

  1. Combine Ingredients: In a bowl, mix the olives, olive oil, red wine vinegar (or lemon juice), garlic, oregano, red pepper flakes (if using), and lemon zest.

  2. Marinate: Toss everything together until the olives are well coated. Cover the bowl with plastic wrap or transfer the mixture to an airtight container. Let it marinate in the refrigerator for at least 2 hours, or preferably overnight, to allow the flavors to meld.

  3. Serve: Remove the olives from the refrigerator about 30 minutes before serving to allow them to come to room temperature. Garnish with fresh herbs if desired.

  4. Enjoy: Serve the marinated olives as an appetizer, on a charcuterie board, or alongside your favorite Mediterranean dishes!

Storage: Keep any leftover olives in the marinade in the refrigerator for up to a week.
