Grilled Pork Chops with Apricot-Chipotle Glaze

A sweet and spicy summer dish!


Ingredients:


For the Pork Chops:


4 bone-in pork chops (about 1 inch thick)

Salt and pepper to taste

For the Glaze:


1 cup apricot jam

1/4 cup chipotle chili sauce

2 tablespoons soy sauce

1 tablespoon honey

1 clove garlic, minced

Instructions:


Prepare the Glaze: In a small saucepan, combine apricot jam, chipotle chili sauce, soy sauce, honey, and garlic. Bring to a boil, then reduce heat and simmer for 5 minutes, or until thickened.

Grill the Pork Chops: Preheat grill to medium-high heat. Season pork chops with salt and pepper. Grill for 4-5 minutes per side, or until cooked through.

Glaze the Pork Chops: Brush the grilled pork chops with the apricot-chipotle glaze.

Serve: Serve immediately with your favorite side dishes.

Tips:


For a spicier glaze, add more chipotle chili sauce or a pinch of red pepper flakes.

Serve with roasted vegetables or a side salad.

You can also bake the pork chops in the oven if you don't have a grill.
