Hawaiian BBQ Chicken and Pineapple Foil Packets

Ingredients:
- 4 boneless chicken breasts
- 1 cup of pineapple chunks (fresh or canned)
- 1/2 cup barbecue sauce (your favorite brand)
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 small red onion, sliced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
1. Preheat your grill to medium-high heat.
2. In a large bowl, combine the chicken breasts with barbecue sauce, making sure they're well coated. Season with salt and pepper.
3. Tear off 4 large pieces of aluminum foil and place a chicken breast in the center of each piece.
4. Top each chicken breast with pineapple chunks, red bell pepper, green bell pepper, and red onion.
5. Drizzle a little olive oil over the veggies and sprinkle with salt and pepper.
6. Fold the foil around the chicken and veggies, sealing it tightly to make packets.
7. Place the foil packets on the grill and cook for about 20-25 minutes, or until the chicken is cooked through.
8. Carefully open the packets (watch out for hot steam!) and garnish with fresh parsley if desired.
Notes:
- You can substitute the barbecue sauce with a teriyaki sauce for a different flavor.
- Feel free to add other veggies, like zucchini or corn, for more variety.
