Herb-Crusted Fish with Citrus Butter Sauce

Ingredients:
For the Fish:
2 fillets of salmon, sea bass, or cod
1 tbsp olive oil
1 tbsp butter
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp garlic powder
1/2 tsp smoked paprika
1 tsp dried oregano
1 tbsp fresh parsley, chopped
For the Citrus Butter Sauce:
2 tbsp fresh lemon juice
1 tbsp orange juice
2 tbsp unsalted butter
1/2 tsp honey
1/2 tsp Dijon mustard
1/2 tsp red pepper flakes (optional)
For Garnish:
1 cup fresh mixed greens (lettuce, arugula, or spinach)
1/4 cup cherry tomatoes, halved
Fresh basil or chives, chopped
Instructions:
Prepare the Fish: Pat fillets dry and season both sides with salt, pepper, garlic powder, paprika, oregano, and parsley.
Heat olive oil and butter in a pan over medium heat. Sear fish for 3-4 minutes per side until golden brown and cooked through. Remove and set aside.
Make the Citrus Butter Sauce: In the same pan, add lemon juice, orange juice, butter, honey, Dijon mustard, and red pepper flakes. Simmer for 2 minutes until slightly thickened.
Assemble the Dish: Arrange fresh greens and cherry tomatoes on a plate. Place the fish on top and drizzle with citrus butter sauce. Garnish with fresh basil or chives.
Serve immediately and enjoy!
