Holiday-Inspired Christmas Baked Salmon

A Festive Centerpiece!


Ingredients:


For the salmon:

- 1 whole salmon fillet (2-3 lbs)

- 2 tablespoons olive oil

- 1 teaspoon salt

- 1/2 teaspoon black pepper

- 1 teaspoon garlic powder


For the glaze:

- 1/2 cup pomegranate juice

- 2 tablespoons honey

- 1 tablespoon balsamic vinegar

- 1 teaspoon Dijon mustard


For the toppings:

- 1/4 cup pomegranate seeds

- 1/4 cup chopped pecans or walnuts

- Fresh rosemary sprigs


Directions:


1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.


2. Prepare the salmon: Place the salmon fillet on the baking sheet. Brush with olive oil, then season with salt, pepper, and garlic powder.


3. Make the glaze: In a small saucepan, combine pomegranate juice, honey, balsamic vinegar, and Dijon mustard. Simmer over medium heat for 5-7 minutes until the glaze thickens slightly.


4. Bake the salmon: Brush the glaze generously over the salmon. Bake for 15-20 minutes, or until the salmon is flaky and cooked through.


5. Add toppings: Remove the salmon from the oven and sprinkle with pomegranate seeds and chopped pecans. Garnish with fresh rosemary sprigs for a festive touch.


6. Serve warm as a stunning holiday main dish!
