Homemade Peppermint Patties

Ingredients:
2 1/2 cups powdered sugar
1 1/2 tsp peppermint extract
2 tbsp unsalted butter (softened)
2-3 tbsp heavy cream
12 oz dark chocolate (chopped or chips)
1 tbsp coconut oil (optional, for smooth coating)
Instructions:
1. In a large bowl, combine the powdered sugar, peppermint extract, softened butter, and 2 tbsp heavy cream. Mix until a smooth dough forms.
2. If the dough is too thick, add the remaining heavy cream 1 tbsp at a time until it's a thick but moldable consistency.
3. Roll the dough into 1-inch balls, then flatten them into round discs. Place them on a parchment-lined baking sheet.
4. Chill the discs in the freezer for at least 30 minutes to firm up.
5. Meanwhile, melt the dark chocolate with coconut oil (if using) over a double boiler or in the microwave in 20-second intervals, stirring between each.
6. Dip each peppermint disc into the melted chocolate, ensuring it's fully coated. Place them back on the parchment-lined sheet.
7. Chill again for at least 30 minutes, or until the chocolate hardens.
8. Serve chilled for the perfect minty treat! Enjoy!
