Slow Cooker Korean Beef Tacos


Ingredients:

- 2 pounds beef chuck roast

- 1/2 cup soy sauce

- 1/4 cup brown sugar

- 1/4 cup gochujang (Korean chili paste)

- 2 tablespoons rice vinegar

- 4 cloves garlic, minced

- 1 teaspoon grated ginger

- 1/4 teaspoon black pepper

- 12 small flour tortillas

- Toppings: sliced green onions, shredded carrots, cilantro, and sesame seeds


Instructions:

1. In a bowl, mix together soy sauce, brown sugar, gochujang, rice vinegar, garlic, ginger, and black pepper.

2. Place the beef chuck roast in the slow cooker and pour the sauce over it.

3. Cover and cook on low for 8-10 hours or on high for 4-5 hours until the beef is tender and shreds easily.

4. Once cooked, remove the beef and shred it with two forks. Return the shredded beef to the slow cooker and mix it with the sauce.

5. Serve the Korean beef in warm tortillas and top with green onions, shredded carrots, cilantro, and sesame seeds.
