Korean Chicken Thighs with Gochujang Glaze

Sweet, spicy, and incredibly flavorful Korean-inspired chicken thighs coated in a rich gochujang glaze!
These tender chicken thighs are packed with bold flavors from garlic, ginger, sesame, and Korean chili paste, creating a perfect dish for family dinners, grilling nights, or meal prep.
Ingredients:
2 lbs boneless, skinless chicken thighs
2 tablespoons olive oil
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
1/4 cup gochujang (Korean chili paste)
2 tablespoons soy sauce or tamari
2 tablespoons honey or maple syrup
1 tablespoon rice vinegar
1 tablespoon sesame oil
1 teaspoon toasted sesame seeds
2 green onions, sliced
1/2 teaspoon black pepper
Salt to taste
Instructions:
Prepare the gochujang glaze (10 minutes):
In a bowl, whisk together gochujang, soy sauce, honey, rice vinegar, sesame oil, garlic, ginger, and black pepper until smooth and well combined.
Marinate the chicken thighs (30 minutes - 4 hours):
Add chicken thighs to the glaze and coat evenly. Cover and refrigerate to allow the flavors to soak into the meat.
Cook the chicken thighs (20-25 minutes):
Heat a grill, skillet, or oven to medium-high heat. Cook chicken thighs until caramelized on the outside and the internal temperature reaches 165°F (74°C).
Apply extra glaze (5 minutes):
Brush the chicken with additional gochujang glaze during the final minutes of cooking for a glossy, flavorful finish.
Rest and garnish (5 minutes):
Let the chicken rest briefly, then sprinkle with toasted sesame seeds and sliced green onions.
Serve and enjoy (2 minutes):
Serve hot with steamed rice, vegetables, or a fresh Asian-inspired salad for a complete meal.
