Korean Oven-Braised Short Ribs

Ingredients:
2 pounds beef short ribs
2 tablespoons vegetable oil
4 cloves garlic, minced
1 tablespoon fresh ginger, grated
1/2 onion, chopped
1/2 cup soy sauce
1/3 cup brown sugar
2 tablespoons honey
1 tablespoon sesame oil
1/2 cup beef broth
1 carrot, sliced
2 green onions, chopped
1 tablespoon sesame seeds
Directions:
Preheat oven to 325°F (160°C).
Heat oil in a large oven-safe pot over medium-high heat.
Sear the short ribs on all sides until browned, then remove and set aside.
In the same pot, sauté garlic, ginger, and onion until fragrant.
Add soy sauce, brown sugar, honey, sesame oil, and beef broth. Stir well.
Return the short ribs to the pot and add sliced carrots.
Cover and transfer to the oven.
Braise for 2.5–3 hours until the meat is tender and falling off the bone.
Remove lid and cook uncovered for 20 minutes to thicken the sauce slightly.
Garnish with green onions and sesame seeds before serving.
