Ingredients:

4 boneless pork chops

2 tbsp olive oil

3 cloves garlic, minced

2 tbsp butter

Salt and pepper to taste

1 tbsp fresh thyme (optional)

4 medium potatoes, peeled and thinly sliced

1 cup shredded cheddar cheese

1/2 cup heavy cream

Directions:

Preheat the oven to 375°F (190°C). Season the pork chops with salt, pepper, and thyme.

Heat olive oil in a large skillet over medium-high heat. Sear the pork chops for 4-5 minutes on each side until golden brown. Remove from the skillet and set aside.

In the same skillet, melt butter and add minced garlic. Sauté for 1 minute until fragrant.

Arrange the sliced potatoes in a baking dish. Pour over the heavy cream and sprinkle with cheddar cheese.

Place the seared pork chops on top of the potatoes and cover with foil. Bake for 30 minutes, then uncover and bake for an additional 15 minutes until the potatoes are tender and the pork chops are fully cooked.

Serve the pork chops with cheesy potatoes on the side, garnished with extra thyme if desire
