Mint Chocolate Chip Snowball Cookies

Ingredients:
1 cup unsalted butter, softened
1/2 cup powdered sugar (plus extra for coating)
1 teaspoon vanilla extract
1 teaspoon peppermint extract
2 cups all-purpose flour
1/4 teaspoon salt
1 cup mini chocolate chips
Green gel food coloring (optional)
Directions:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large mixing bowl, cream together the butter and powdered sugar until light and fluffy. Add the vanilla and peppermint extracts, mixing until combined.
Gradually add the flour and salt, mixing until the dough forms. If using food coloring, mix in a few drops until you reach the desired minty green shade.
Gently fold in the mini chocolate chips.
Roll the dough into 1-inch balls and place them on the prepared baking sheet about 1 inch apart.
Bake for 12–14 minutes, or until the edges are just lightly golden. Let the cookies cool for 5 minutes on the baking sheet before transferring to a wire rack.
While still slightly warm, roll the cookies in powdered sugar to coat. Once completely cool, roll them in powdered sugar a second time for a festive snowy appearance.
