Moschari Kokkinisto (Greek Beef Stew)

Ingredients:


1.5 pounds beef (chuck or stewing beef), cut into cubes

2 tablespoons olive oil

1 onion, finely chopped

3 cloves garlic, minced

1/2 cup red wine

1 can (14 oz) crushed tomatoes

2 tablespoons tomato paste

1 cup beef broth

1 cinnamon stick

1 bay leaf

1 teaspoon dried oregano

1/2 teaspoon sugar

Salt and pepper to taste

Fresh parsley for garnish


Directions:


Heat olive oil in a large pot over medium-high heat.

Add beef and sear until browned on all sides. Remove and set aside.

In the same pot, sauté onion until soft and translucent.

Add garlic and cook until fragrant.

Stir in tomato paste and cook for 1–2 minutes.

Pour in red wine and let it simmer for 2–3 minutes.

Add crushed tomatoes, beef broth, cinnamon stick, bay leaf, oregano, sugar, salt, and pepper.

Return the beef to the pot and stir well.

Cover and simmer for 1.5–2 hours until the beef is tender and the sauce thickens.

Garnish with fresh parsley and serve with pasta, rice, or crusty bread.
