Pickled Cucumber

Delicate and delicious pickled cucumber. Charming classic, sliced cucumber in effective vinegar. Ideal for juicy grilled pieces of meat. Incomparably good also with meatballs with boiled potatoes.
Ingredients
4 servings
1 fresh cucumber
3 krm salt
2 tbsp vinegar (12%)
1 dl of water
2 tablespoons of sugar
1/2 tsp white pepper
2 tablespoons chopped parsley
Slice fresh cucumber thinly with a cheese grater (peel first if necessary). Mix with salt in a wide bowl. Place a dish and a weight over it for about 30 minutes, pour off the spade.
Make a layer of vinegar, water, sugar, white pepper and chopped parsley. Stir until the sugar dissolves.
Put the cucumber in a jar and pour the mixture over it. Let stand for an hour before serving.
