Potato Muffins

Ingredients:

- 4 medium potatoes, peeled and thinly sliced

- 3 tablespoons unsalted butter, melted

- 3 tablespoons olive oil

- 3 cloves garlic, minced

- 1 teaspoon dried thyme

- 1 teaspoon dried rosemary

- Salt and pepper, to taste

- Fresh parsley, chopped (for garnish)


Instructions:

1. Preheat your oven to 400°F (200°C).

2. In a bowl, mix the melted butter, olive oil, minced garlic, thyme, rosemary, salt, and pepper.

3. Take a muffin pan and grease it lightly with some oil or butter.

4. Layer the potato slices in each muffin cup, overlapping them slightly.

5. Brush the garlic herb mixture over the potato layers in each cup.

6. Repeat layering and brushing until all potatoes are used.

7. Bake in the preheated oven for 30-35 minutes, until the edges are golden brown and crispy.

8. Allow to cool for a few minutes, then carefully remove from the muffin pan using a fork.

9. Garnish with fresh parsley before serving.


Tips:

- You can experiment by adding different herbs, like oregano or basil, for a unique flavor twist.
