Sticky Glazed Christmas Chicken

Ingredients:


For the Chicken:


4 lbs chicken drumsticks or thighs, bone-in and skin-on

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon black pepper

For the Glaze:


1/2 cup honey

1/4 cup soy sauce

2 tablespoons balsamic vinegar

2 tablespoons Dijon mustard

2 cloves garlic, minced

1 teaspoon fresh rosemary, finely chopped

1 teaspoon fresh thyme, finely chopped

For Garnish:


Fresh rosemary sprigs

Pomegranate seeds

Directions:


Prepare the Chicken:

Preheat your oven to 400°F (200°C). Line a large baking sheet with foil and place a wire rack on top. Pat the chicken dry with paper towels, drizzle with olive oil, and season with salt and pepper. Arrange the chicken on the wire rack.


Make the Glaze:

In a small saucepan, combine honey, soy sauce, balsamic vinegar, Dijon mustard, garlic, rosemary, and thyme. Bring to a simmer over medium heat, stirring occasionally, until the glaze thickens slightly, about 5 minutes.


Bake the Chicken:

Brush the chicken with the glaze, coating evenly. Bake for 25 minutes. Remove from the oven, brush with more glaze, and bake for an additional 20 minutes, or until the chicken is golden and caramelized. Reserve any leftover glaze for serving.


Serve and Garnish:

Transfer the chicken to a serving platter. Drizzle with the reserved glaze and garnish with fresh rosemary sprigs and pomegranate seeds for a festive touch. Serve warm.
