This Sweet Chili Fusion Chicken is a vibrant and flavorful dish that combines the sweetness of chili sauce with savory elements, making it perfect for a weeknight dinner or a special occasion. The marinated chicken is tender and juicy, while the colorful bell peppers add a fresh crunch. Serve it with rice or noodles for a complete meal that’s sure to impress your family and friends!
Ingredients:
- 1 lb (450g) boneless, skinless chicken thighs
- 1/4 cup sweet chili sauce
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp rice vinegar
- 2 cloves garlic, minced
- 1 tsp grated ginger
- 1 tbsp sesame oil
- 1/2 cup bell peppers, sliced (red, yellow, or green)
- 1/4 cup green onions, chopped
- Sesame seeds for garnish
Directions:
In a bowl, whisk together sweet chili sauce, soy sauce, honey, rice vinegar, minced garlic, grated ginger, and sesame oil to create a marinade. Add the chicken thighs to the marinade, ensuring they are well coated. Let it marinate for at least 30 minutes (or up to 2 hours in the refrigerator for deeper flavor).
Preheat your grill or a skillet over medium-high heat. Remove the chicken from the marinade, reserving the marinade for later. Cook the chicken for about 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (75°C).
In the last few minutes of cooking, add the sliced bell peppers to the grill or skillet, allowing them to soften slightly. Once the chicken is cooked, brush it with the reserved marinade and let it caramelize for an additional minute.
Remove from heat and let the chicken rest for a few minutes. Slice the chicken and serve it on a plate, topped with sautéed bell peppers and a sprinkle of chopped green onions and sesame seeds for garnish. Enjoy the sweet and savory fusion of flavors in this delightful dish!
