Thai Pork with Peanut Sauce

Savory Thai Pork with Creamy Peanut Sauce
Ingredients:
1 pound pork tenderloin, cut into thin strips
2 tablespoons olive oil
1/4 cup soy sauce
2 tablespoons peanut butter
1 tablespoon brown sugar
2 tablespoons rice vinegar
1 tablespoon fresh lime juice
1 tablespoon chopped fresh cilantro
1/4 teaspoon red pepper flakes
2 cloves garlic, minced
1 teaspoon ginger, grated
Salt and pepper to taste
1 tablespoon sesame seeds (optional)
Cooked rice, for serving
Directions:
Heat olive oil in a large skillet over medium heat. Add the pork strips and cook, stirring occasionally, for 5-7 minutes until browned and cooked through. Remove the pork from the skillet and set aside.
In the same skillet, combine the soy sauce, peanut butter, brown sugar, rice vinegar, lime juice, cilantro, red pepper flakes, garlic, and ginger. Stir until the peanut butter melts and the sauce becomes smooth.
Return the pork to the skillet and toss to coat in the peanut sauce. Cook for an additional 2-3 minutes until the pork is fully coated and the sauce has thickened.
Season with salt and pepper to taste.
Serve over a bed of rice and garnish with sesame seeds if desired.
