Toffee Crunch Tree Cookies Crunchy, festive, and full of holiday cheer!

Ingredients

For the Cookies:

1 cup (2 sticks) unsalted butter, softened

1 cup brown sugar, packed

1 large egg

1 tsp vanilla extract

1/2 tsp almond extract (optional)

2 1/2 cups all-purpose flour

1/4 cup cornstarch

1/2 tsp baking powder

1/2 tsp salt

For the Decoration:

Toffee Glaze:

1 cup powdered sugar

3 tbsp toffee-flavored coffee creamer or milk

1/2 tsp vanilla extract

Melted chocolate (milk or dark) for drizzling

Toffee bits (store-bought or crushed Heath bars)

Piping bags with small round tips

Instructions

Step 1: Make the Cookie Dough

Cream Butter and Sugar: Beat butter and brown sugar in a large mixing bowl until fluffy and light.

Add Wet Ingredients: Mix in the egg, vanilla extract, and almond extract.

Combine Dry Ingredients: In a separate bowl, whisk together flour, cornstarch, baking powder, and salt. Gradually add to the wet mixture until a dough forms.

Chill Dough: Wrap the dough in plastic wrap and refrigerate for 1–2 hours to firm up.

Step 2: Shape and Bake

Preheat Oven: Set oven to 350°F (175°C). Line baking sheets with parchment paper.

Roll and Cut: Roll out the chilled dough to 1/4-inch thickness. Use a tree-shaped cookie cutter to cut out cookies.

Bake: Place cookies on baking sheets and bake for 8–10 minutes, or until edges are just golden. Allow cookies to cool completely before decorating.

Step 3: Prepare the Toffee Glaze

In a small bowl, whisk together powdered sugar, toffee-flavored creamer, and vanilla extract until smooth. The glaze should be thick but pourable. Adjust consistency with more powdered sugar or creamer as needed.

Step 4: Decorate the Cookies

Base Coating: Spread or pipe the toffee glaze over each cookie, covering the surface evenly. Allow to set for 10–15 minutes.

Chocolate Drizzle: Melt chocolate and transfer it to a piping bag. Drizzle over the cookies in a zigzag pattern to mimic tree garlands.

Toffee Crunch Topping: Immediately sprinkle toffee bits over the glaze and chocolate drizzle before they set.

Step 5: Set and Serve

Allow cookies to dry completely before serving or packaging. The glaze and chocolate should harden for easy handling.
