Traditional Mexican Carne Guisada with Soft Tortillas

Recipe:
Ingredients:
1 1/2 pounds beef stew meat, cut into chunks
1 tablespoon vegetable oil
1 medium onion, chopped
2 tomatoes, chopped
3 cloves garlic, minced
2 cups beef broth
2 tablespoons tomato paste
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon ground oregano
1 bay leaf
Salt and pepper to taste
Fresh cilantro for garnish
8 small flour tortillas
Lime wedges for serving (optional)
Directions:
Brown the Beef: Heat the vegetable oil in a large pot or Dutch oven over medium-high heat. Add the beef stew meat and cook until browned on all sides, about 5-7 minutes. Remove the beef and set it aside.
Sauté Vegetables: In the same pot, add the chopped onion and cook until softened, about 3 minutes. Add the garlic and tomatoes, cooking for an additional 2-3 minutes until the tomatoes begin to break down.
Simmer the Carne Guisada: Return the browned beef to the pot. Add the beef broth, tomato paste, cumin, chili powder, oregano, bay leaf, salt, and pepper. Stir to combine, bring to a simmer, then reduce the heat to low.
Cover the pot and let it cook for 1.5-2 hours, or until the beef is tender and the sauce has thickened.
Prepare the Tortillas: While the carne guisada is simmering, heat a dry skillet or griddle over medium heat. Warm the flour tortillas for 1-2 minutes on each side, until lightly charred and soft.
Serve: Spoon the carne guisada into bowls, garnish with fresh cilantro, and serve with the warm tortillas on the side. Add lime wedges for a tangy twist, if desired.
