Air Fryer Cashew Chicken

Ingredients

1 pound boneless, skinless chicken thighs (about 1 pound)

cut into bite-sized pieces

Marinade Ingredients:

1/4 cup hoisin sauce

1/4 cup soy sauce

1 tablespoon white vinegar

1 tablespoon sugar

2 tablespoons grated fresh ginger

1 teaspoon cornstarch

Other Ingredients:

1 teaspoon olive oil

2 tablespoons minced garlic

1/4 cup steamed carrots, diced

2 tablespoons green onions

1/3 cup toasted cashew halves


Instructions

Mix together all marinade ingredients.

Place chicken pieces in a Ziploc bag with 2/3 of the sauce and toss. Marinate chicken for about 30 minutes. If marinating longer, refrigerate until ready to cook.

Line the Air Fryer basket with a grill mat or lightly greased sheet of aluminum foil.

Spread chicken in the Air Fryer basket and air fry at 375°F for 10-12 minutes until cooked through.

Meanwhile, use a wok or skillet to sauté garlic in olive oil until fragrant, about 1 minute.

Add remaining 1/3 of the marinade and stir constantly until sauce thickens.

Toss chicken, carrots, and cashews in the wok to coat. Sprinkle with green onions before serving.
