Authentic Greek Chicken Gyros with Tzatziki

Ingredients:

4 boneless, skinless chicken thighs
2 tablespoons olive oil
1 tablespoon red wine vinegar
3 cloves garlic, minced
1 teaspoon dried oregano
Juice of 1 lemon
Salt and pepper, to taste
4 pita breads
1 cup tzatziki sauce
1 red onion, thinly sliced
2 tomatoes, sliced
1/2 cucumber, sliced
Directions:
In a bowl, combine olive oil, red wine vinegar, minced garlic, oregano, lemon juice, salt, and pepper. Add the chicken thighs and marinate for at least 2 hours, preferably overnight.
Preheat a grill or skillet over medium heat. Remove chicken from marinade and cook for about 5-7 minutes per side, until fully cooked and slightly charred.
Warm the pita breads on the grill or in a pan. Slice the cooked chicken into strips.
Assemble the gyros by placing chicken strips on the pita bread, adding tzatziki sauce, red onion, tomatoes, and cucumber.
Fold the pita around the fillings and serve immediately.
