Authentic Spicy Indian Beef Vindaloo

Ingredients:


1.5 lbs (700g) beef, cut into bite-sized pieces

2 tablespoons vegetable oil

1 large onion, finely chopped

4 garlic cloves, minced

1 tablespoon fresh ginger, minced

2 tablespoons white vinegar

2 teaspoons ground cumin

2 teaspoons ground coriander

1 teaspoon turmeric

1 teaspoon paprika

1-2 teaspoons cayenne pepper (adjust for heat level)

1 teaspoon garam masala

2 medium tomatoes, finely chopped

1 cup water or beef stock

Salt to taste

Fresh cilantro leaves for garnish

Directions:


Heat vegetable oil in a large skillet or heavy-bottomed pot over medium heat.

Add the chopped onions and sauté until golden brown, about 8-10 minutes.

Stir in the garlic and ginger, cooking until fragrant, about 1-2 minutes.

Add the beef pieces and sear until browned on all sides.

Mix in the ground cumin, coriander, turmeric, paprika, cayenne pepper, and garam masala. Cook the spices with the beef for 1-2 minutes to release their flavors.

Pour in the white vinegar, stirring to coat the beef in the spice mixture.

Add the chopped tomatoes and cook until softened and blended with the spices, about 5 minutes.

Pour in the water or beef stock, bring to a simmer, and reduce the heat to low. Cover and cook for 45-60 minutes, stirring occasionally, until the beef is tender and the sauce has thickened.

Adjust salt to taste and garnish with fresh cilantro leaves before serving.
