Baked Chicken and Rice

Ingredients
4 bone-in, skin-on chicken thighs (or chicken breasts)
1 ½ cups long-grain white rice, rinsed
2 ½ cups chicken broth
1 small onion, finely chopped
2 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon paprika
1 teaspoon dried thyme
½ teaspoon garlic powder
½ teaspoon onion powder
Salt and pepper, to taste
2 tablespoons unsalted butter, cut into small cubes
Fresh parsley, chopped (for garnish)
Directions
1. Prepare the Rice Base:
Preheat the oven to 350°F (175°C).
In a 9x13-inch baking dish, add the rinsed rice, chicken broth, chopped onion, and minced garlic. Stir to combine.
2. Season the Chicken:
Pat the chicken thighs dry with paper towels. Rub with olive oil, then season with paprika, thyme, garlic powder, onion powder, salt, and pepper.
Place the seasoned chicken on top of the rice mixture in the baking dish.
3. Bake:
Dot the rice mixture with small cubes of butter.
Cover the baking dish tightly with foil and bake in the preheated oven for 45 minutes.
After 45 minutes, remove the foil and bake for an additional 15-20 minutes until the chicken is golden and the rice is fully cooked.
4. Serve:
Remove from the oven, garnish with fresh parsley, and serve hot!
