Baked Pork Leg with Pineapple Glazed

Recipe
Ingredients:
1 pork leg of approximately 4kg
2 cups of pineapple juice
1 cup pineapple slices, drained and chopped
1 cup of brown sugar
1/2 cup of honey
1/4 cup Dijon mustard
1/4 cup apple cider vinegar
5 cloves of garlic, minced
1 teaspoon of freshly grated ginger
2 tablespoons soy sauce
Salt and pepper to taste
Scent nails for decoration (optional)
Instructions:
Preheat the oven to 180°C (350°F).
Place the pork leg in a large baking tray and season generously with salt and pepper.
In a medium bowl, mix pineapple juice, brown sugar, honey, Dijon mustard, apple cider vinegar, garlic, ginger and soy sauce. Stir well until all the ingredients are combined.
Pour the mixture over the pork leg, making sure to cover the entire surface. Place chopped pineapple slices around the meat.
If desired, insert cloves of scent into the meat to add a decorative and aromatic touch.
Cover the pork leg with aluminum foil and bake for 2 hours.
After 2 hours, remove the aluminum foil and spray the leg with its juices. Increase the oven temperature to 200°C (400°F) and bake for 1 hour, spraying occasionally, until the meat is golden brown and well cooked.
Let the pork leg rest for 15 minutes before cutting it. Serve with cooking juices and pineapple slices.
