Beef Burritos

Ingredients:
- 1 pound ground beef
- 1 packet taco seasoning (or homemade seasoning)
- 4 large flour tortillas
- 1 cup cooked rice (white or brown)
- 1 cup black beans (drained and rinsed)
- 1 cup diced tomatoes
- 1 cup shredded cheese (cheddar or your choice)
- 1 cup shredded lettuce
- 1/4 cup sour cream or Greek yogurt
- 1/4 cup fresh cilantro (chopped)
- 1 avocado (sliced or mashed, optional)
- Lime wedges (for serving)
- Olive oil (for cooking)
Instructions:
1. Cook the Beef:
- In a large skillet over medium heat, add a drizzle of olive oil.
- Add the ground beef and cook until browned, breaking it apart with a spatula. Drain excess fat if necessary.
- Stir in the taco seasoning and water according to package directions; simmer for 5 minutes.
2. Warm the Tortillas:
- In a dry skillet or microwave, warm the tortillas for easy folding.
3. Assemble the Burrito:
- On each tortilla, layer the cooked rice, seasoned beef, black beans, diced tomatoes, shredded cheese, and lettuce.
- Add avocado and top with sour cream and cilantro.
4. Roll the Burrito:
- Fold in the sides and roll up from the bottom to enclose the filling.
5. Toast the Burrito (optional):
- In the skillet, add a little olive oil and toast the burritos seam-side down until golden and crispy, about 2-3 minutes per side.
6. Serve:
- Slice in half and serve with lime wedges on the side.
