Classic Gyros with Homemade Tzatziki

Ingredients:


1 lb ground lamb or beef (or a mix of both)

1 small onion, finely grated

3 cloves garlic, minced

2 teaspoons dried oregano

1 teaspoon ground cumin

1/2 teaspoon smoked paprika

Salt and pepper to taste

1 cup plain Greek yogurt

1/2 cucumber, grated and squeezed to remove excess water

2 tablespoons fresh dill, chopped

1 tablespoon lemon juice

1 tablespoon olive oil

4 pita bread rounds

1 cup shredded lettuce

1 medium tomato, sliced

1/4 cup thinly sliced red onion

Directions:


Prepare the gyro meat: In a large mixing bowl, combine ground meat, grated onion, garlic, oregano, cumin, smoked paprika, salt, and pepper. Mix thoroughly until well blended.

Cook the meat: Heat a large skillet over medium heat. Add the meat mixture and cook, breaking it into small pieces, until browned and fully cooked, about 8–10 minutes. Drain excess fat if necessary and set aside.

Make the tzatziki sauce: In a separate bowl, combine Greek yogurt, grated cucumber, dill, lemon juice, olive oil, and a pinch of salt. Mix well and refrigerate until ready to use.

Assemble the gyros: Warm the pita bread rounds in a dry skillet or oven. Spread a generous amount of tzatziki sauce on each pita. Add a layer of shredded lettuce, sliced tomato, and red onion. Top with the cooked meat.

Serve: Fold the pita bread around the filling and serve immediately. Enjoy with extra tzatziki on the side if desired.
