Beef Tips in Gravy with Rice

Ingredients

For the Beef Tips:

2 lbs beef tips or stew meat

2 tbsp olive oil

1 medium onion, diced

3 garlic cloves, minced

2 cups beef broth

1 tbsp Worcestershire sauce

1 tbsp soy sauce

1 tsp paprika

1/2 tsp dried thyme

Salt and pepper (to taste)

For the Gravy:

2 tbsp unsalted butter

2 tbsp all-purpose flour

1/2 cup beef broth (additional, if needed)

For the Rice:

2 cups cooked white or jasmine rice

Instructions

Prepare the Beef Tips:


Heat olive oil in a large skillet or pot over medium-high heat.

Season the beef tips with salt and pepper. Add them to the skillet and sear on all sides until browned. Remove and set aside.

Sauté the Onion and Garlic:


In the same skillet, sauté the diced onion until softened (about 3-4 minutes). Add the minced garlic and cook for another 1 minute.

Simmer the Beef Tips:


Return the beef tips to the skillet. Add the beef broth, Worcestershire sauce, soy sauce, paprika, and thyme. Stir to combine.

Reduce the heat to low, cover, and let it simmer for 1.5 to 2 hours, or until the beef is tender. Stir occasionally and add more broth if necessary.

Make the Gravy:


In a small saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes until golden brown (this makes a roux).

Slowly add 1/2 cup beef broth to the roux, whisking constantly to avoid lumps. Cook until thickened.

Combine Gravy with Beef Tips:


Stir the prepared gravy into the simmering beef tips. Cook for an additional 5-10 minutes, allowing the flavors to meld and the gravy to thicken.

Cook the Rice:


Prepare the rice according to package instructions while the beef tips finish cooking.

Serve:


Plate the rice and spoon the beef tips and rich gravy over the top. Garnish with chopped parsley if desired.
