Beef with Oyster Sauce

Ingredients:


- 1 lb (450g) flank steak, thinly sliced against the grain

- 1/4 teaspoon baking soda

- 1 tablespoon soy sauce

- 1 tablespoon Shaoxing wine (or dry sherry)

- 1 teaspoon cornstarch

- 2 tablespoons oyster sauce

- 1 tablespoon soy sauce

- 1/2 teaspoon sugar

- 1/4 cup beef broth (or water)

- 2 tablespoons vegetable oil, divided

- 2 cloves garlic, minced

- 1 teaspoon fresh ginger, grated

- 1 small onion, sliced

- 1 bunch asparagus, trimmed and cut into 2-inch pieces

- Cooked rice, for serving


Directions:


1. In a medium bowl, combine the sliced beef with baking soda, 1 tablespoon soy sauce, Shaoxing wine, and cornstarch. Mix well and let marinate for 15 minutes.

2. In a small bowl, mix together oyster sauce, 1 tablespoon soy sauce, sugar, and beef broth. Set aside.

3. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated beef in a single layer and cook until browned, about 1-2 minutes per side. Remove the beef from the skillet and set aside.

4. In the same skillet, add the remaining tablespoon of vegetable oil. Add minced garlic, grated ginger, and sliced onion. Sauté for about 1 minute until fragrant.

5. Add the asparagus pieces to the skillet and stir-fry for 2-3 minutes until tender-crisp.

6. Return the cooked beef to the skillet. Pour the sauce over the beef and vegetables, stirring to coat everything evenly. Cook for an additional 1-2 minutes, allowing the sauce to thicken slightly.

7. Remove from heat and serve the beef with oyster sauce over cooked rice.
