Bombay Aloo – A Flavorful Indian Delight

If you’ve ever been to an Indian restaurant, you’ve likely come across Bombay Aloo! This flavorful dish is made with golden potatoes coated in a fragrant blend of spices, simmered in a rich tomato-based sauce. A perfect balance of warmth and depth, it's easy to make at home and pairs beautifully with naan or rice.
2.20 lbs potatoes, cubed
1 can (29 oz) tomato sauce
1 tbsp coriander powder
2 tsp garam masala
1 tsp mustard seeds
1 tsp cumin seeds
1 tsp turmeric
3 tbsp olive oil
3 cloves garlic, sliced
1 large onion, sliced
2 medium chilies, halved
1 thumb-sized piece ground ginger
¼ cup fresh coriander leaves
Directions:
1. Boil the cubed potatoes in salted water for 10-12 mins. Drain.
2. Heat oil in a large pan, sauté onions for 5-8 mins.
3. Add garlic and chilies, fry for 2-3 mins.
4. Stir in all the spices and fry for another 2 mins until fragrant.
5. Pour in the tomato sauce, reduce heat, and let simmer.
6. Add in boiled potatoes and cook until the sauce thickens.
7. Garnish with fresh coriander and serve warm!
