Cajun Roasted Chicken & Potatoes

Ingredients:


1 tbsp garlic powder

1 small onion

1 tbsp onion powder

4 tbsp oil


Method:


In a food processor, blend the onion, tomato paste, garlic, parsley, lemon juice, oil, salt, red chili powder, garlic powder, onion powder, Cajun seasoning, and vinegar until smooth.

Preheat the oven to 375°F (190°C).

In a baking dish or skillet, create a layer of potatoes.

Top the potatoes with chicken, making small cuts in the chicken to allow the marinade to soak in.

Brush the marinade evenly over the chicken and potatoes. (For deeper flavor, marinate the chicken overnight.) Sprinkle additional Cajun seasoning on top.

Roast in the preheated oven for 30 minutes, covered.

Uncover and bake for an additional 20-30 minutes at 425°F (220°C) until the liquid evaporates and the chicken is fully cooked.

Tips:


Adjust garlic and chili powder to your preferred spice level.

Use fresh, high-quality ingredients for the best flavor.

Garnish with fresh parsley and serve hot for a perfect meal.

For ultimate flavor, marinate the chicken overnight!
