Is there anything better than Curry Beef With Potato in Caribbean cuisine? Tender beef pieces that can be easily pierced with a fork, potatoes breaking down to create a flavorful and thick gravy, all enhanced by the combination of curry, herbs, and the subtle spiciness of Caribbean Sunshine.
Ingredients:
1 lb beef, cubed
3 large potatoes, diced
1 large onion, chopped
3 cloves garlic, minced
1 tbsp curry powder
1 tsp ground allspice
1 can coconut milk
1 cup beef broth
2 tbsp vegetable oil
Salt and pepper to taste
Fresh cilantro for garnish
Instructions:
Heat oil in a large pot over medium heat. Sauté onions and garlic until softened.
Add the beef and brown on all sides.
Stir in curry powder and allspice, cooking for a minute to release the flavors.
Add potatoes, coconut milk, and beef broth. Bring to a boil.
Reduce heat and simmer for 30-40 minutes, or until beef is tender and potatoes are cooked through.
Season with salt and pepper. Garnish with fresh cilantro before serving.
Enjoy the warmth and spices of this Caribbean favorite!
