Chicken Lettuce Wraps

Ingredients
1 tablespoon sesame oil
¼ cup diced onion
2 cloves garlic, minced
1 tablespoon fresh ginger, minced or ginger paste
10 oz ground chicken
¼ cup low-sodium soy sauce
2 tablespoons Thai sweet red chili sauce
Juice of 1 lime
1 teaspoon maple syrup
⅓ cup water chestnuts , chopped
¼ cup chopped scallions
¼ cup fresh cilantro, chopped (optional)
¼ to ½ cup shredded carrots
Sesame seeds for garnish
1 head butter lettuce, leaves rinsed and dried
Directions
Prepare the Garlic and Ginger Base
Heat the sesame oil in a pan over medium-high heat. Add the diced onions and cook for 2-3 minutes until they soften and turn translucent. Stir in the minced garlic and fresh ginger, cooking for another 2 minutes until fragrant.
Cook the Chicken
Add the ground chicken to the pan, breaking it apart with a spatula or wooden spoon. Season with salt and pepper, and cook until the chicken is fully browned and no longer pink, about 3-4 minutes.
Mix the Thai Chili Sauce
In a small bowl, whisk together the soy sauce, Thai sweet red chili sauce, lime juice, and maple syrup. This sweet and spicy sauce will coat the chicken beautifully, creating layers of flavor.
Combine Everything
Pour the sauce over the cooked chicken, sprinkle with chopped cashews, and stir well. Reduce the heat to low and cook for another 2 minutes to let the flavors meld together. Remove from heat, and stir in the shredded carrots, scallions, and cilantro. The freshness from the herbs and the crunch from the water chestnuts and carrots add the perfect contrast to the warm, savory chicken.
Assemble the Lettuce Wraps
Spoon a generous amount of the chicken mixture onto each butter lettuce leaf. Drizzle some of the sauce from the pan over the top for extra flavor, and finish with a sprinkle of sesame seeds. Serve immediately and enjoy!
