Italian Basil Chicken Cutlets with Tomato and Goat Cheese Topping
Ingredients:
4 boneless, skinless chicken breasts
1 cup breadcrumbs (Italian seasoned)
½ cup grated Parmesan cheese
1 egg, beaten
½ cup flour
Salt & black pepper to taste
2 tbsp olive oil
2 medium tomatoes, diced
3 oz goat cheese, crumbled
2 tbsp fresh basil, chopped
1 tbsp balsamic glaze (optional for drizzle)
Directions:
Prepare the Chicken:
Pound the chicken breasts to even thickness. Season with salt and pepper. Dredge each cutlet in flour, dip in beaten egg, then coat in a mixture of breadcrumbs and Parmesan.
Cook the Cutlets:
Heat olive oil in a skillet over medium heat. Cook chicken 4–5 minutes per side until golden brown and cooked through. Transfer to a plate and keep warm.
Top & Serve:
In a small bowl, mix diced tomatoes, goat cheese, and fresh basil. Spoon over the crispy chicken cutlets. Drizzle with balsamic glaze before serving for an Italian-inspired finish.
